I was gonna submit Calvinball and even had a pretty hefty writeup for it, but I realised this is supposed to be a single player game, heh.
Coyote Chase
I was gonna make this Tom & Jerry themed, but I feel that'd be a real bad disconfirm, especially so soon. This bonus round is a derivative of Race to the Finish where you run around the canyon. Wile E. Coyote is snooping around in the background, interacting with the foreground indirectly in different ways (for example, painting a tunnel you can run through or blowing up a Rushmore-esque monument that will block the path) - when the stage loops around in the non-timed version outside of Arcade Mode, those changes are permanent and there can even be further changes.

An incredibly iconic anime series and character, but he is iconic mostly for being in the car, and that's not as easily transmitted to a fighting game moveset unless we have the car itself fighting like Hornet from Daytona USA did in Fighters Megamix. That all said, Speed will get in and rev up the powerful Mach Five, then start racing around the stage and driving into foes. He'll sometimes use the cars super jumping feature to get to higher up places, and even send out a robotic pigeon to bother foes, or attack with giant buzz saws that sprout from the car. Once he's done, he'll get out of the car and do the famous pose you see here, then he'll disappear.

The Hulk is a fictional superhero appearing in publications by the American publisher Marvel Comics. Created by writer Stan Lee and artist Jack Kirby, the character first appeared in the debut issue of The Incredible Hulk (May 1962). In his comic book appearances, the character is both the Hulk, a green-skinned, hulking and muscular humanoid possessing a vast degree of physical strength, and his alter ego Dr. Robert Bruce Banner, a physically weak, socially withdrawn, and emotionally reserved physicist. The two exist as independent dissociative personalities, and resent each other.
Following his accidental exposure to gamma rays while saving the life of Rick Jones during the detonation of an experimental bomb, Banner is physically transformed into the Hulk when subjected to emotional stress, at or against his will. This transformation often leads to destructive rampages and to conflicts that complicate Banner's civilian life. The Hulk's level of strength is normally conveyed as proportionate to his level of anger. Commonly portrayed as a raging savage, the Hulk has been represented with other personalities based on Banner's fractured psyche, from a mindless, destructive force, to a brilliant warrior, or a genius scientist in his own right. Despite both Hulk and Banner's desire for solitude, the character has a large supporting cast. This includes Banner's lover Betty Ross, his best friend Rick Jones, his cousin She-Hulk, and therapist and ally Doc Samson. In addition, the Hulk alter ego has many key supporting characters, like his co-founders of the superhero team the Avengers, his queen Caiera, fellow warriors Korg and Miek, and sons Skaar and Hiro-Kala. However, his uncontrollable power has brought him into conflict with his fellow heroes and others. Despite this, he tries his best to do what's right while battling villains such as the Leader, the Abomination, the Absorbing Man and more.

Banner and the Hulk have been adapted in live-action, animated, and video game incarnations
What's his purpose?
When summoned, he could appear as Bruce Banner. When you hit him, he would become a giant assist and he could walk around the stage and he could do his attack: "Hulk Smash!", which he does a ground pound that shakes the whole stage and deals heavy damage. Also, he could grab a fighter and throw it across the stage, dealing great damage. He also can tank some attacks, which it gives him a super armor.
He can be defeated actually.
I know he can work as a fighter, but due to fact how destructive he is, I'm gonna make him as an assist character due to his popularity and I don't think we could have him in Base roster or DLC, but still he could fit as an Assist trophy character despite he has some moveset potential.
Actually, an one Avenger as Assist character won't ruin the whole game I guess...

When this AT spawns, a horde of Snoos will appear on the back of the stage. They will then analyze the performance of the summoner. Dealing damage to the foes has the Snoos appear pleased, causing a red arrow (upvote) to come out of the ground and buff you. If the summoner get launched a lot, the Snoos will look disappointed, causing a blue arrow (downvote) to come from the sky and hit the summoner, dealing damage and debuffing them for a bit. Once the Snoos cast their judgement, they will disappear.
Although most Snoos would be in their default appearance, others would be dressed like fighters in the roster.

Honorable mentions go to...honestly a lot, but the Taco Town Bag is also pretty entertaining, and the Hoverboard is definitely iconic.
As an aside, if Green Lantern gets in, I might have it go on random that it could be Hal, John, Guy, Kyle, Jessica, Simon, Killowog, or Duck Dodgers. Sure.
