Ori & Sein:
The titular character from the Metroidvania series developed by Moon Studios, Ori is a character that has seen some surprising rise in Smash requests, even moreso after both games came to the Switch.
In Smash, Ori will mainly take from his Blind Forest incarnation, where he is joined by Sein, who can attack for him using Spirit Flame, a three-projectile combo attack. Ori himself can also use Bash to bounce off enemies and projectiles to move around, Stomp to hurtle to the ground and deal damage from above, or Light Burst to throw a grenade of light in front of himself that explodes after a set period of time.

Zagreus
Zagreus is the main character of the game Hades. Hades quickly rose to popularity due to the devs prolific background with games like Bastion and Transistor and also because the game is just incredibly fun and you should totally play it if you like roguelikes.
In Infinite Zagreus will run around and attack using the various weapons seen in Hades.
The Stygian Blade: Zagreus will do a three hit sword combo
Eternal Spear: Zagreus throws the spear a long distance
Shield Of Chaos: Zagreus will charge up a shield bash and dash forward dealing big damage. While charging all projectiles will be reflected off the shield
Heart Seeking Bow: Zagreus shoots a cone of arrows in front of him
Twin Fists Of Malphon: Zagreus does a very powerful uppercut
Adamant Rail: Zagreus shoots a powerful grenade.
Right before Zagreus leaves he throws out a bottle of Ambrosia, which would just be a reskinned Fairy Bottle.
If Zagreus is KO'd his defeat animation is reminiscent of his Death animation in Hades

sans(Undertale)
He ain't bad to bone, just a very laid-back skeleton who likes to be your friend as long as your doing the right thing. If not then you might get on his bad side which isn't great.
When sans spawns he stands their and explains a speech relating to how you'll die(similar to the beginning of his fight) before displaying his one glowing blue eye indicating he's going to give you "one" bad time.
For Infinite: Sans will randomly throw someone forward away from the stage attempting to launch them away(anyone with a high percent of damage will be KO'd off the stage).
he will also summon a field of bones from the ground or a large bone poll which knocks fighters back.
He'll also summons The Gaster Blasters from two different sides which deal a good ton of damage. He is unable to get hit since he zooms around the stage to keep himself from getting hit, though this can exhausted him to the point where he can't dodge quickly(landing one hit will ultimately KO him similar to the end of his boss fight).
After about 15 seconds of chaos, Sans will get exhausted and then say one last friendly line saying he was just having some fun, raise his hands up and makes a wink with his left eye. before he leaves sans make one last bad pun.

Alien Hominid (Alien Hominid)
When summoned, runs and jumps around the Stage and shoots with his ray gun at enemies. When its close to Player, it bites their head off and makes players stunned or Reverse their Controls. Also, for some reason it can abduct Players to death. Remember, you can escape from Tractor Beams when you're lower than blast zone, but when you're up to KO, you cant escape it.
He can be KOed.
Inclusion of Alien Hominid has the Reason, because he could represent everyone's favorite Flash Game Website called Newgrounds with its subsidiary Behemoth in this Game. Also he could act like Fun Assist that shoots at enemies or Bites their head off to make it more fun at gameplay if you're playing with Items. Also, if you like Alien Hominid, then I respect your opinion.
Such as Shovel Knight, The Knight will be fully modelled in 3D and have all animations, like his walking and jumping animations for example, lifted from his home game, Hollow Knight!
Once The Knight gets summoned, he can perform multiple actions. He will be very flexible, as he can not only dash on the ground, but mid-air as well, albeit only once per jump. Here is his movelist as an Assist Trophy.

Mariam (Bloodstianed):
Mariam has become a fairly popular character, with her game receiving multiple spin offs and her making guest appearances in other games and media. When summoned, she will dash around the stage, similar assist trophies like Grey Fox and Alucard, performing moves and spells from her game.

Madeleine (Celeste)
Madeleine would boost into opponents on the stage to knock them off, using her powers from her home game. She can hit opponents with boosts in 8 different directions as well like in her home game, occasionally snacking on a Strawberry during her idle animations. Celeste is a critically acclaimed indie title released on most modern platforms that won numerous awards. An Assist Trophy would be a good complement to the stage we added.

Notte the Fairy (Dragalia Lost):
The mascot of Dragalia Lost, Notte is a plucky little fairy who for the most of the game's lifespan, was basically emotional support and a morale booster. Come Early 2021, and Notte essentially got an upgrade:

In Part 2 of Chapter 18, Notte gained access to change into a more human-sized form and even fights alongside the main cast at one point! So in Smash Bros, she is equipped with a dagger which she uses to chase down opponents and attack with weak, yet quick strikes. Occasionally, Notte will either curl into a spiky pink ball Sonic style and fly around the stage for a bit with Faerie Punishment, or summon a lingering tornado that deals damage over time to opponents inside with Faerie Illusion. If Notte gets to half her HP or lands enough hits, she will go even further beyond:

Through the power of Metamorphosis, Notte becomes even bigger, her size being equivalent to Rathalos, and her dagger becomes a huge sword. While in this state, she will fly slower, but will deal a more powerful three-hit sword combo. Occasionally, Metamorphosis Notte will stab the sword into the earth and summon a large tornado around her with Faerie Circlet, or perform a mighty circular slash around her with Faerie Glory.
When she's done with her role as an Assist Trophy, Notte will revert back to her much smaller fairy form and wave the audience goodbye before flying off.

To clear up the elephant in the room: as far as we know, Tin Star is a Nintendo IP. The Pickford Bros' website lists Nintendo as the "client" for the game, and the manual for Tin Star lists it as co-owned between Ninty and Software Creations - Software Creations was merged into Acclaim, who went bankrupt years later. While they did sell off many of their IPs, I can find no info of the Tin Star IP being one of them.
Now anyway, let's talk Kid. As a ruthless bandit of the Black Oil Gang, The Kid Johnson is quite possibly the most powerful and undeniably the most annoying AT in the game - he will rapidly shoot three-way bullets from his gun while running away from any foes who get too close. Those bullets go far and deal great damage and knockback - however, he can be KO'd pretty quickly if reached... at a cost: Tin Star's Code of Good Guy Rules don't take kindly to putting babies in harm's way, so if you KO him a book of the rules will slap you harshly on the head - this deals no knockback, but a whooping 42% damage AND Flower!
Why should The Kid Johnson be added? Because he's a robot baby with a gun. That's it really, but it's also kinda cool to have an AT with a slight morality system.
Well, this one is probably gonna be the weirdest one, just saying that now.
New Assist Trophy from unrepped IP: John Raimi (Geist)

John Raimi is the main protagonist of the video game Geist (and because this is a slight point of contention, yes Nintendo owns the IP). An anti-terrorist sent to infiltrate a corrupt organisation, John's spirit is seperated from his body, and must now possess various objects and enemies in order to bring this menace to an end. When summoned, John will do something I don't think many Assist Trophies do: he'll interact with any items around him and "possess" them, making them active without a user. The Cukko summons other Cukkos unprovoked, the Super Curry becomes a living batch of flames, etc..
As for why John... to be honest, I wanted a character from one of Nintendo's more weird and obscure games, to see if we can bring new life and awareness to something that has been forgotten. And I bet an Assist Trophy like this could stick out for a LOT of players...
Esna (Ever Oasis)
Esna once spawned will gently fly around in the background and give the user a Water shield that causes the user to slowly regenerate health and makes the user immune to fire attacks. Esna will also summon water geysers that launch opponents upwards and waves that push opponents to the side.
Misc. Assist Trophy submittion:
Mr. Skipper (Sky Skipper)
When Summoned via Assist Trophy, he flies above the Stage and drops Bombs on Players, when Bombs Exploded on Enemies, they got in Cages, stunned. They can breakout from Cage, but they still got hit by Bombs and caught in Cages.
He can't be Harmed or Koed.
The Inclusion of Assist Sounds fun, which imagine guy in Biplane flying over stage and starts to bomb the Battlefield. He could represent Nintendo's Arcade Golden Age and he was unrepresented in Smash until now as Assist. Mr. Skipper is main character of this Arcade game, which is eligible for Assist Job.

The Snowboarder would function close to how the Excitebiker would. The Snowboarder would appear with various mountains and hills for it to ramp off of, hitting players and causing both knockback and damage to anyone who it comes into contact with.
Pious Augustus
Pious Augustus is a major antagonist from the Gamecube horror game, Eternal Darkness. He was once a great Centurion solider beofre he was corrupted by the dark magic of the ancients. When summoned, he will walk around the stage, stalking and attacking fighters before disappearing. He can be KO'ed
Ayumi Tachibana
Famicon Detective Series
When she appears, she will investigate for evidence which consists of her walking around the stage, inspecting, pondering with a thought cloud, and occasionally finding evidence. Dealing damage to opponents during this time further “increases” the evidence and proof found. Finally, at the end of her Assist Trophy, she will present her findings by saying “I think I unraveled the mystery!” which causes a lightbulb thought bubble to explode upwards and deal any damage to opponents. The damage dealt is determined by just how many damage the summoner deals out to the other opponents during the investigation period.

Mike Jones (Startropics Series)
Startropics is one of the most underrepresented 1st Parties in Smash, barely managing to get any representation throughout the games outside of a mention in Chronicle. Mike Jones will use his yo-yo to hit opponents on the stage when summoned, as well as occasionally use a baseball bat for his attacks.

Dragaux (Ring Fit Adventure)
The main antagonist of Ring Fit Adventure, Dragaux won fans the world over since his reveal. In Smash, he will do one of three attacks:
- Arm Exercise: Dragaux's skin will turn red as he does a random arm exercise before a giant red fist erupts from in front of him, rising upwards and dealing heavy damage.
- Leg Exercise: Dragaux will turn blue as he does a thigh press or some other leg exercise before a giant blue foot falls from the sky, meteor smashing anyone in the air and burying anyone on the ground.
- Core Exercise: Dragaux will turn yellow and crunch his abdominal muscles for a bit before a buff yellow torso erupts from his body and flies forwards, dealing damage and hitting anyone in its path.
