Also, I've yet to see a decent explanation for 108 stages if we're not getting any newcomers beyond Incineroar and Ken?
Why would they hold these specific 5 stages in such high regard and keep them an absolute secret?

I've no horse in the race of Box Vs CoroCoro. If anything, I'm a sort of wait and see sort. Yet, I do think it's possible to have 5 stages in hiding.

4 stages not linked to newcomers I don't think it entirely unlikely (one stage for the Pokemon rep). I've seen some speculate that stages could be related to the Spirits modes, or related to boss characters yet to be revealed (for example, we could get a Monster Hunter Stage as one of the 4, and it hasn't been properly shown due to its relation to Spirits or a Boss mode). There's also the theory that it could be something along the lines of a Minecraft stage, which could be a standalone stage reveal to reveal at a later time.

Also I think it's fair to hide stages that may imply newcomers before they're ready to announce everyone. Teasing around Pyrosphere in the past was a mistake that got people to assume Ridley was in. If they showed off a Rhythm Heaven stage before revealing the entire cast, then that would lead people to assume the wrong things. So it could be preventive for those issues.

There is also a chance there could be a stage related to a Nintendo game that has yet to be proper revealed or release. For just a random example, there could be a stage related to Luigi's Mansion 3 in some way. This wouldn't have been able to be shown when we were told 103 stages, as LM3 wasn't revealed yet. So other stages could be in the same boat.

Just thoughts to chew on. I think we could have two more characters, five more characters, no more characters, or whatever. I'm pretty happy with the game as is.

I just feel it'd be kinda wonky for 5 stages to have no newcomer rep whatsoever. Incineroar may get an Alola stage, sure, but...that leaves 4. Even with the small potential of Ken with a stage? That leaves 3 very hidden areas.

According to Mimique himself, he wouldn't be surprised at all Sakurai decided to put a second GS character as an echo to possibly promote a future GS installment, whether it's a remake or brand new entry.
Of course as always, take this with grains of salt, but Mimique is believed to be an insider disguising his leaks as guesses and predictions, and between CoroCoro, Sakurai's possible hints and all of that.. All I'm saying is that I totally could see that happening.

Skull Kid, unless it's the TP design, wouldn't make sense as a boss; and even with the TP design, you're just fighting puppets.

Now, Majora's Mask and its different forms, that would make sense. And if the bosses are in some sort-of adventure mode, it'd make sense to unlock Skull Kid after beating Majora.

Skull Kid, unless it's the TP design, wouldn't make sense as a boss; and even with the TP design, you're just fighting puppets.

Now, Majora's Mask and its different forms, that would make sense.

A multi-phase fight with both Skull Kid and Majora's forms would make the most sense though, skull kid can still be a boss even if you didn't fight the kid himself in MM.
