What is it you love seeing the most? Is it the chaingrabs? or the Game Start KO's? Or the meteor smashes? Or do you love watching the Captain yell gtfo with an electric knee?
Personally, I love watching anything that involves falco getting his *** handed to him.

But I think I like watching the mindgames that setup for the combos and edgeguarding. The edgeguarding is such a great way to show off how well a character can cover an opponents options and is definitely one of the very reasons I picked up Mario (Dr. Mario came 6 months later) in the first place.
