I really like the submissions so far, but I just thought of an oddball concept that I think could work.
Where In The World is Carmen Sandiego?
Yep, we're doing this.
Due to the geography-based nature of the Carmen Sandiego games, I'd argue that her tracks could consist of various places in the world, which would be really cool to see in DriDim. The first track, though, would be something made up for the series.

Track: Where In The World is Carmen Sandiego (Where in The World is Carmen Sandiego)
Based on the game show from the 90's, this track takes place in the ACME Crimenet HQ, with racers in pursuit of - who else - Carmen Sandiego. Various other VILE agents from the show also appear, but as you explore the various rooms of the HQ, Carmen's never too far away.
if you're racing as carmen herself, the npc carmen still shows up anyway. weirder things have happened in this franchise.
Mega Man
This would pull from all the sub series. Tracks could be based on specific levels or just general concepts.

Castlevania
So this might seem like a weird choice but Castlevania is known for its areas and locations and so I think it would be cool to include multiple tracks based on locations in Dracula’s Castle (other places would be fine as well but a track that’s just “Dracula’s Castle” and not a specific area probably wouldn’t be eligible. We could even hint at the other tracks taking place in the same castle and maybe even have an extra mode where you go through one lap of all tracks at once just for fun.

Where there are many things that stand out in the series the locations is definitely towards the top of the list.

Track: Papu's Pyramid - Song: Papu's Pyramid
While I probably won't allow submissions of Papu himself because... yikes, the 90s were a mistake... his track is easily the most iconic CTR track with its meticulous tricks, which would be adapted to work within DriDim's engine.
