I'm really like Ground Theme 2 at the moment. I especially love it towards the end, where it goes really random with the funny percussion and everything. Love it!!!! :D
I've always loved "Snake Eater", but I wish that they left the vocals in there. Although that would've made playing a bit harder. Eh.
Apart from that, I would have to go with Star Wolf from Star Fox: Assault. The lone brass voice at the beginning gives me a sense of an imminent conflict.

I really like Norfair atm. I never really liked it, as I only ever heard the beginning bit whilst playing Classic or All-Star mode, but now it's one of my favourites.
