The Wii uses the sync function to sync the controllers to the system specifically, Nintendo has had demo units with hundreds of Wiis next to each other, and no interference. This will be a non-issue. I myself, will probably be using the Gamecube controller, but I will try them all out to see...

Items are a good way to balance the game so that a bottom tier has as good of a chance as a top tier. This does not work competitively because a competitive match is based on skill and items balance the game by adding a luck factor.

This is how Smash Bros. has always worked... they take the moves and models of the character's most recent game.
