I'm still going to extend the suggestion for Steins; Gate 0 since I recall you mentioned you are a huge fan of the original Steins;Gate. I found the sequel show to be a fun watch just like the first series: just make sure you watch the 23 Beta OVA before getting into Steins; Gate 0, because it has an alternate ending to episode 23 of the original that serves as the direct prequel to S;G0.
If you are into sports anime, Free is a good watch. A lot of people probably know it as the "swimming anime with fan service," but from my experience watching it, only the first season had some of those fanservicey bits, with the later seasons toning down on the fan service emphasis. It's surprisingly a very heartwarming and quite a good character-driven show, with the second season, Eternal Summer, having quite some emotional moments. I'll admit I am rather biased towards this anime because I was a swimmer in high school and still swim for exercise and leisure, so it was because of that passion that I found it very easy to relate to all of the characters because their struggles and motivations regarding the sport were much like mine. Still, it has my recommendation.
If you are into isekai, Re:Zero is can be a thrill to watch, especially with its recent announcement of Season 2. If you like Steins; Gate, you'll probably like Re:Zero because it has some similar moments to it (their anime adaptation are even done by the same anime studio: White Fox). Re:Zero also deconstructs the isekai genre at several points.
