Yeah, I actually was thinking about this.

Inklings themselves are made of ink. Would bullets even hurt them in their universe?

Capn' Cuttlefish is called what he is stateside and is still a squid, and Nautili just look like regular Nautili with some tentacles stretched down through their clothes Octodad style because the NPR style band has one as their pianist.

My instinct says that at least for the base game they'd just keep the Inklings they've always had and move the Octolings from DLC to base game while giving both a fresh set of tentacle styles (at least two more per gender for Inklings and six more per gender for Octolings if they want to use the same UI they already are and not drive my pattern recognition nuts), and if something more did end up getting added down the line it'd be more of a curveball.

Ah. I never played the Splatoon games so I didn't know. I intend to eventually though.
