The reason is money and resources.nintendo has so many old franchises that they just sit on and leave to rot for whatever reason
like yeah, i understand kids are gonna understand the brand of pokemon or mario but are clueless about ****in doshin the giant, but there's a lot of untapped potential in the idea of rebooting some of these unexplored genres that older games attempted to provide at the time
Nintendo only has so many employees and so many partners. When they invest in something, they need to know that the investment is going to be worth it. And until the Mario & Pokemon machines stop printing money, they have no reason to stop using them. Even if a game was enjoyed by fans or critics, if it didn't generate enough of a profit to counter the time and money investment, they need to either rethink how to make the game or just make something else.
