Villager's definitely a top 5 bad MU for us, imo. The gimps and keep-away against Ganon are ridiculous.
That being said though, just keep a few things about Villager in mind:
-Lloid rocket approaches
-Turnip/NAir gimps
-FAir/BAir spam
Lloid rocket is just like Bowser Jr.'s mecha koopa - it's a mix-up device. It forces you to either jump or shield, and the Villager will either intercept your jump or grab your shield. So you have to call their bluff. For instance, at the beginning of the vid, I assumed he was going to try to grab my shield, so I jumped and used down-b. Other times he might try to slingshot you, in which case, PS the rocket and punish with an aerial.
As for gimps, the turnips stay out FOREVER. It's legit infuriating how long that hitbox lasts. So either recover low, recover very high, or intercept the gimp with an aerial. He can also slingshot you so make sure you go low if you suspect he'll try to.
Also, bowling balls... bowling balls are more gimmicky than anything, but can still getcha. If he's just chilling by the ledge and you think he's gonna drop a ball, recover a little early or if he's already charging it, try to wait it out, use side-b to go over it, or just recover high. In certain situations, you'll just be in a position where your just can't avoid it, but you can most of the time with good timing and spacing. You have to be hugging the line of the ledge to get hit by it, so if you can recover before reaching its line of descent, go for it.
