Just friendlies but with a good old school player so still a good learning experience.
First off, if you ever encounter a ganon in bracket, try to strike to FD. That way you can stop him from abusing the platforms. A good ganon player will make better use of the platforms than you.
In neutral, you really don't want to be the first one to jump. Whiffing a bair or fair is extremely unsafe and you'll just get uair'd and then juggled. What you want to do instead is bait out a jump and then try to land a fair/bair really quickly. You'll have to play pretty defensively.
I also noticed you didn't respect ganon from the ledge very much. Big mistake. Ganon has a lot of options from the ledge that you just won't be able to beat out. Ledge hop invincible jab/ftilt, ledge hop down-b/side-b, ledgedash jab, rld double jump aerial, ledgedash by you pivot ftilt or bair/dair, etc. What you need to do instead is to position yourself just outside of his ledgedash range so that if he tries to ledgedash jab you, you can just fsmash or dmash him. If there's platforms, go about 2/3 distance along the platform so you can drop down with a fair/bair depending on where he goes.
Finally, you need to be a little more aggressive when edgeguarding ganon. His down-b leaves him really vulnerable after. If you can predict where he will down-b (ganons telegraph this a lot and often do it mindlessly) you can jump out and hit him as soon as he gets out of it before he can jump again. Dsmash him by the ledge if he's not sweet spotting. If he is, you might need to go offstage to hit him. Basically, it's worth it to take some risks when he's offstage as Zelda.
