I play with Y as my shield button, mainly for techs, shield dashes, and PSCs on the occasions that I can. I use R set to attack when I play Sheik. The best way to get out of the dodging habit is to understand the options of the opposing character and always have your speedy/spacing moves on hand to react. I get people a lot out of the IASA frames on Ganon's up smash, with stuff like dtilt, jab, or an aerial. I only really ever dodge on the ground if I'm trying to avoid a grab or an attack that is going to do significant shield push/damage if I just try to block it. I powershield as much as possible, for that reason, but I seldom take big risks trying that against attacks that are charged and released. But just having to tap Y to powershield makes matters much easier for me.
