Overall, I'd say speculating Gen 8's options has been very similar to Gen 7.
There's a lot of Pokémon who could work, but you have quite a few that don't seem interesting (Incineroar), and a few who don't feel well-suited for a fast-paced fighting game like Smash (Mimikyu).
Yeah, there's a wide selection to look at, a handful of prominent mons worth keeping a close eye on...and speculation is only looking at a select few and not necessarily for the right reasons.

And like last time, the majority who don't care about the pokemon character immediately fall on a starter. I've seen a few people looking outside of the starters, namely for Urshifu & Toxtricity, so that's nice. Though it's mostly because people claim Toxtricity to be the Lucario of this gen (understandable but flawed logic) or that Urshifu works better to sell the SwSh expansion pass. While I've got nothing against Urshifu, tell me 1 time where a character (who is exclusive to dlc content from it's series) was ever picked instead of someone from base game. Not even the dlc characters from Arms got any love as spirits.
Hit it right on the head. We have talk focusing almost exclusively on the starters out of some believing only they have any real chance, with some extra via Toxtricity because it's popular to talk about or Urshifu out of assuming it'd be a "promotional" pick.
Which is the core problem here:
When we get big franchises like Pokémon that are both probable to get a newcomer and have multiple viable options for one, discourse over which are most likely to happen gets dragged around by people outside the franchise's own fanbase. I've actually seen a lot of variety from dedicated Pokémon fans (shout out to Joe Merrick himself being interested in Zacian), but the loudest voices in Smash speculation are coming from non-fans jumping to conclusions about stuff they're uninformed on.
And that's how we get all of these assumptions flying around. Rillaboom has to happen to complete a set of fully evolved starters (even though newcomers aren't chosen to fill quotas). Or it has to be Cinderace because it's going to be a star in the anime (even though it'll be the team ace of the secondary protagonist, not to mention Ash's team MVP in Gen 7
didn't get in). Or Toxtricity, because its popularity means it must be this generation's Lucario (even though it hasn't been highlighted nearly as often as previous examples and we didn't even know the Toxel line
existed until the leaks two weeks before release). Or Urshifu must be the obvious choice to advertise the DLC (even though we're long past Isle of Armor, there're questions over whether it could actually be unique, and the entire argument misinterprets the idea of "promotional" characters).
Look, no offense to anyone who legitimately wants any of them--I can't fault anyone for supporting a character they genuinely like. But
so damn much of this talk has revolved around mistaken details that are just taken at face value without question! And then we're stuck over here being almost completely ignored because we don't line up with the assumptions.
It's frustrating.
And I've seen some people suggest a stance change as it's gimmick even though it doesn't work like that. The 2 forms are completely seperate from eachother outside of sharing the same species. The same also applies for Toxtricity (though I think they'd make easier skins of eachother compared to Urshifu since between Amped & Low Key forms they don't get exclusive signature moves).
And that's another thing! It feels like the stance change idea is thrown on as an afterthought by people who
don't know the canon! And it's just...accepted, without doublechecking if it'd actually make sense. Sure, we've seen some creative liberties before, but when you're building your entire concept around swapping between two forms when the character canonically picks one fighting style and specializes in it it's...

about the character and then finding a mechanic or thematic idea that fits.
