Multitude of reasons. Quite a bit of people don't like the writing that game had, the characterization wasn't good, the game wasn't that fun, and many say it didn't do justice as a sequel.
Unfortunately, that's drowned out by the Gamers being mad because "SJW Politics" or something.

So I saw Mustard’s Ultra Rare League cars and it adds so much more lore to the game.

Then he kept losing battle after battle until the past Chairman before Rose offers to rig a battle for Mustard if he so chooses. Mustard then refuses and leaves.
He cuts off the entirety of Galar and his dojo from the outside world . That’s why he plays Pokémon quest all day. Because he doesn’t want his students to know about the league challenge or more because of the corruption in Galar.
One of the NPCS mentions Mustard is always on the TV so they never get to see anything on the league challenge which is why you aren’t known as the champion if you show up there.
Mustard resents the league after all that happened to him and he knows it’s corrupted.
Like that’s some deep lore.

As far as I can tell, it's because
one of the main characters from the previous game gets abruptly killed off in a way that comes across as out of character in order to motivate another character to seek revenge.
As well as a host of other, more bigotry-related reasons. (not bigotry within the game itself, but bigotry among the people bashing it)

The Wii has sold over 100 million systems worldwide, which is why many games kept getting releases long after the Wii U was released. The Just Dance games in particular always catch people unaware, which have continued to have releases on Wii to this day. There is apparently enough of a market for these kinds of games that people with Wiis are still purchasing. The PS2 was similar, in that a lot of sports games and licensed games got releases for quite a while after the PS3 came out, because the system was cheap, sold well over 100 million systems worldwide, and there was a market there still.
The Wii U, on the other hand, never surpassed 14 million systems in global sales. So why on Earth they're releasing this game for Wii U is beyond me. That's not a large install base, and the only people still playing Wii U are generally playing it for Nintendo games like Twilight Princess HD (which I played a bit this morning) because they're not on the Switch yet.
The Switch has sold over 56 million systems, almost four times that of the Wii U. So this is all very bizarre.
