Monster hunter would definitely not be customizable. As Marvel vs Capcom Infinite shows, they can have the Monster Hunter use all their weapons for their moveset if they want to. The only thing that could be even remotely considered "customizable" is if they really go all out on the alternate costumes with the different armors from Monster Hunter.
Morrigan is a weird case in that her design is relatively safe except for her chest window. Morrigan's upper outfit has been made somewhat longer to cover her breasts a bit more from time to time, but in all cases, her breast window in the middle has always remained. And if you look at all the female characters in Smash, none of them, not even in their alternate costumes, have one. The closest one being Palutena due to showing some upper chest skin, but still no breast window. And CERO is pretty strict with skin showing.
1. That would be a modeller's nightmare due to having to design a form for 70-80 characters and counting.
2. I don't see why Dimitri can't be in 3D games cause he does have games without the female transformations while still keeping Midnight Bliss. Like Project X Zone, Cross Edge and Namco X Capcom.

I wouldn't be mad with Byleth as he could also have a unique moveset and bring something new to the FE representation that said I would almost certainly prefer Edelgard.
