He is the only SSB Original to not be revealed yet (just like in Brawl) so can we assume is it either next week he is announced, or another character (veteran or newcomer) altogether?

Yoshi doesn't get a lot of love in the Smashverse, neither as a playable character nor the universe he brings with him to the Smashverse.

The way I see it, Yoshi will probably remain in the same position as he did before... obviously the physics and speed will differ, but will it be in Yoshi's favor competitively?
The announcement of such obvious or unimpressive characters should be save for later.Yoshi will return. Who gives a care if he's not popular in competitive play, it's still Yoshi, one the most beloved and important Nintendo characters. They'll announce him eventually, trust me

And I agree, announcing Yoshi may be a great dissapointment for people expecting a newcomer or a more popular returning character. If anything, I wonder if Yoshi will be announced alongside Peach... or maybe a Mario newcomer like Toad.

No, not at all. I'm just trying to state Yoshi seems to be under-the-radar for most non-Yoshi mains. Yoshi has always been a background character in the Smashverse, not that it's a bad thing.
Sheriff gives more of an unlockable vibe should he be in. That is, if you're going off the "first Nintendo character" reasoning (Which I actually found out is not true. Nintendo's first game (or at least what they consider their first), EVR Racing, features horse jockeys as characters in the horse race version.).
Now I'm convinced it's just me. But, then again is he really that exciting of a move set to warrant unlock able status? No, so I'd personally want him as a starter.
