Panicking or not, I can't pass up an opportunity to tell you how you should be playing a character I don't play! Plus you were complaining about Mac the other day, so this is like, perfect
I saw one jab total out of you, and it was pointblank. Otherwise most of what you were doing in neutral was really unsafe attacks. Jab's pretty low commitment and should be safe to throw out as long as you watch for Jolt Haymaker. Speaking of Jolt Haymaker, keep in mind that it can cross up on your shield; I'm not
quite sure if the math works out for it, but maybe OoS usmash/FW would be your best punish for it so you don't have to guess. At worst on a FW whiff you just go for a platform and eat the end hits of an upB. I'd also lab out the timing on that because you didn't seem comfortable with the shield stun, I'm guessing the one time you spotdodged after a Jolt Haymaker you were going for a dsmash.
(I'm going to feel bad if Mac's run is low enough to go under jab)
Phantom looks pretty good in the MU, both because it's a ranged obstacle that's annoying for a ground-based character to move around and because of the hitlag it causes if Mac hits it himself (something I enjoy abusing with Luma in Rosa v Mac, and something you used for an fsmash I see).
Regarding shielding Mac's smashes, drop shield and dash attack(/JC usmash?) for your punish. There's too much pushback for shield grab to work, you'll just get pushed off the ledge before it comes out. In general, sitting in shield is alright against Mac; he's not killing you with throws (DI away if you get grabbed so he can't dthrow>upB around 100% though), his grab is kind of bad, and only spaced dtilt is safe.

but at that height Mac doesn't have any options worth considering other than airdodge anyway
and with him falling faster than you he could've gotten a really early kill if he sideB/upB(/downB)'d your reappearance
my point is, as awesome as a magnifying glass FW kill would've been, there was both no reason for him to get hit by it and it could've(should've) gotten you killed.
