Along those lines, I find it interesting that every time they showcased the Brawl demo, they almost always used Samus, and never failed to mention how she turns into Zamus. Not sure what that means exactly, but it's interesting nevertheless...

Yeah, some press have confirmed that the varia suit is reapplied for ZSSs final smash.
But Sakurai knows that some will play with items off, and he wouldn't imprison an entire character with a unique moveset behind an item/final smash. There will be some way to start a match as ZSS, mark my words.

That's all she does is put the suit back on? She doesn't even have an attack or anything? That sucks.

She also emits some sort of aura that damages foes when you get the suit back. That's about it... I wanted some sort of homing whip that instantly kills... EVERYONE!

I honestly feel that Sakurai kept Zelda away so as to not reconfirm Shiek.
If you notice, most of the characters not included in the demo are the ones that take up the most space because of their mechanics (Trainer's 3 in 1, Wario's fart buildup, Ice Climbers as a duo, Kirby's copy, etc). So a Zelda with a transformation would fit under that category...
