Liquid Nitrogen Ice Cream

For my chemistry class, we had to do an outside-of-class project anything relating to chemistry. My lab partner told me about this "liquid nitrogen ice cream" he had over the summer and said we should make it for our project.

I was a bit skeptical, but I went with it. After a good amount of prep to perfect the recipie and order the liquid nitrogen from our local welding shop (as well as read up on stuff like LN safety and such), we did our presentation today in front of the class.

It was a HUGE success. It couldn't have gone any better. Our ice cream was soooooo creamy and it tasted amazing. Everybody in the class was wowed by the whole idea of making ice cream like this.

Has anyone else made/eaten LN ice cream? I am doing this again for Thanksgiving to make dessert and amaze my relatives :)

It wasn't crystallized; it was actual ice cream that was really creamy. The LN freezes the ice cream mixture so fast that it keeps crystals from really forming.

Hmm.. my fault, what I meant to say was creamy, but yes it's good stuff, though not in particular for this time of the year since it's like freezing!

I once had Lobster Icecream. It was ice cream with frozen chunks of lobster in it

Perhaps deadly chemicals would of made it better

Liquid nitrogen ice cream? Sounds risky.
It's not too risky; all you have to do is cover up your skin with clothes (no shorts, flip-flops, T-shirts, etc.), wear goggles to protect your eyes, and use ski gloves when pouring the LN. That's what we did.

I once had Lobster Icecream. It was ice cream with frozen chunks of lobster in it

Apparently you've never seen Goldeneye. Liquid Nitrogen is an uncontrollable killing machine. It took that guy and it will take you too

I'll ask my english teacher to try this. Hell i'll ask him tomorrow. Don't worry, he's also one of the science teachers at my school as well and we break stuff with LN every year if you have him.

people have used liquid nitrogen to cool CPUs at like 5GHz or something like that

but man i lol'd so hard, yeah you've made my day

I'm confused.

Isn't 4/5th of the air Nitrogen? How can it be dangerous?

Then again, I'm not a chemist.

Nitrogen has some properties to it that makes it sorta deadly (namely with ingestion). Liquid Nitrogen is actually very cold, and I mean cold enough to turn rubber into glass. Your best bet is to wear Nylon (I kinda forgot why it doesn't break down, it just does). Also, contact with the body and, well, there was an episode of Time Warp on the Discovery channel, that dealt with this.

I remember that. That was purely astounding. If nitrogen can freeze a ROSE, a FLOWER... It can do some bad damage to a human. :ohwell:

Still, this sounds pretty neat. A bucket of ice cream coming up from a container surrounded by a spectral blue fog... Best way to stop a party, heh.

If nitrogen is easily-obtainable, I'll have to try this...

Ok I need to clear some things up.

Liquid Nitrogen CAN kill you because it's obviously so ****ing cold. It boils at -321°F which is somewhat close to the surface temperature of Pluto.

You can freeze pretty much anything with LN and it will shatter like glass. This is true.

However, LN is: non-flammable and non reactive. When it boils into nitrogen gas, it is safe to breathe. Keep in mind that the air we inhale is about 3/4ths nitrogen. Breathing nitrogen is only a problem when it greatly displaces oxygen (ie you pour LN in a very confined, poorly ventilated room).

This is what I mean when I say "inert", that is, LN is inert chemically. It won't explode like sodium or violently react with other things.

You can buy LN at your local Airgas company or welding shop. It's actually cheaper ($15 for 2 liters) than you think.

As for the recipe, this is what we used:

Materials:
- Large stainless steel pot
- Large wooden spoon
- Gloves, goggles, and other protective clothing
- Something to serve the ice cream into
- Liquid Nitrogen, obviously (2 liters)

Ingredients:
- 1.5 quarts of half and half
- 1 quart of heavy cream
- 1.5 quarts of sugar
- 5 tablespoons of vanilla

Add all the ingredients and stir them together for about a minute an a half. After that, add flavors to the mixture to give your ice cream flavor. We used Hershey's chocoloate syrup to get chocolate ice cream. DO NOT POUR THE LIQUID NITROGEN IN UNTIL ALL OTHER INGREDIENTS HAVE BEEN STIRRED!

Put your protective clothes and other safety things on before you add the liquid nitrogen. Pour the liquid nitrogen slowly. If you pour it all in at once, it will bubble out of the pot and make a big mess. After you pour some LN in, stir with the spoon for a bit. Repeat with some more LN and then more stirring. Keep doing this until the mixture begins to get more and more solid and it turns into ice cream.

The above recipe serves about 15-20 people.

If the ice cream starts melting, pour a bit more LN on it to freeze it again.

Fun Fact: Dippin' Dots, which may be the most delicious dairy-based food ever made, is frozen with liquid nitrogen. How cool!
