Why do you think his grandfather and cousin Maria have the last name, Robotnik and not Eggman?
Because SEGA of Japan integrated the name into the main canon by the time of SA2’s conception like Takashi Iizuka specifies in the Retro Gamer interview from a couple months ago.

Eggman, himself, never canonically goes by Robotnik. He’s never called himself Robotnik and no one ever called him Robotnik.

I was taught the other way, though.
Thanos is not plural.
So do not you add the "'s"?
I tried doing research, but they did not give me good answers.

For the bolded part, that was what I was talking about, actually.

Still, if we count the US and perhaps European localization of Sonic Adventure 1, he did refer to himself as Robotnik, as did the humans in that game, at least in one cutscene.

In grammatically correct English, you add 's to indicate possession regardless of it ending in an "s" so long as the subject is singular. Adding only an apostrophe is strictly for plural.

So for example:

I got Mark Jones's movie ticket.
I got all the Joneses' movie tickets.

It's a common misconception. Like most of English's convoluted and stupid rules.

You just add the "'" when it is plural, but in terms of names, you still have to add the "'s".

I’ve been taught many conflicting things but the idea is that do what you want on this one

I only use s’ when using plurals, not possessives
