Do I really need a GCC adapter to play with a single GCC on the Wii U? Is there anything else I can get instead of the adapter?

The adapter is also good for any time you'll have other people with Gamecube controllers that want to use them on your Wii U as well. Sure, you can get either the Wired Fighting Pad or Hori's Gamecube Controller styles Classic Controller, but not only will you yourself have to deal with input issues, anyone else who wants to just use a normal Gamecube controller will be left out and turned off from wanting to play.

I wasn't at all offering a serious suggestion. Most people seem to either go for the adaptor or the pro controller so I was referencing that.

Anyway with the return of the porn, I think I'll leave for now.

but even with that aside, there's the input delay issues of Nintendo's wireless controllers.

You can find plenty of matches of it on Youtube uploaded Jourdal2012 and other channels.
