For sheik, space all your aerials so you don't get grabbed. When you grab her, throw her up and keep her in the air above you since her dair isn't all that good. Crouch cancel her tilts at low percent to stay on the ground and not get comboed into her fair.
Get her off the stage as quickly as possible and edgeguard her. Hang onto the ledge to force her to upb onto the stage. Because of her upb lag you will be able to get up onto the stage and fsmash her back off.
