How to beat good meta knights

what I do is attack once when the move is used, and again if they do a gair.
best way i would deal with mks is simply this. figure out their autopilot. such as u said they will spotdodge and dsmash. thats one free punish. they will upb into a glide attack into a grab/ftilt/dsmash. they will tornado. just know the starting and ending frames of these moves and u should be in good shape. but that alone will not beat a pro mk. to me i dont believe in the better character (unless its link and mk lol) i believe that mindgames>skill of character. just outsmart the mk player.
