for all my characters I don't use the c-stick for aerials. at least for meta knight, should i learn to use the c-stick for things such as fast fall up airs?

I notice when watching a lot of pro matches/streams that they don't dodge as much as I normally did when playing smash. What's wrong with dodging a lot? Are they able to take advantage of the lag or something?

Been playing the demo a lot with my friend and, every time I try to attack him in the air after launching up, he just air dodges and I miss my attacks. Is there any way to punish this and/or successfully pull combos off in the air?
