I'm really hoping for Haltmann Works Elite Management (the boss battle theme from Kirby: Planet Robobot), Song Of Supplication (the 3 Mages battle theme from Kirby Star Allies), a couple Pokémon villain team leader themes (like, say, Ghetsis, Lysandre, and Lusamine), Bowser's battle music from the Super Mario Galaxy games and Super Mario Odyssey, and perhaps Vaati's theme if I'm really lucky.
I'm going to compile some tracks from different series and put them inside a spoiler tag to reduce the listing size. I'd prefer Nintendo do remixes of these.
More music from series that only have an assist trophy, like Bomberman and Shovel Knight. It worked nice for Takamaru and Dillion, and would be a great way to get more third party representation in the game.
Since Dark Samus is playable, they will probably have her boss music in the game. But I personally hope its the version from Metroid Prime 2 and not Prime 3, since I prefer that version
Several Metal Gear Rising boss themes (The memes, Sakurai!), Several Hyrule Warriors stage themes (Into the Greenwood, Heart of the End, Sequence of Drops, Remnants of Twilight, Psychostorm, all of the eclipse themes), Several Shadow the Hedgehog stage/boss themes (yeah I'm edgy trash don't @ me), Several Final Fantasy themes (seriously? only two in smash 4? wow...), and if we could stick a version of the Zero Two theme into Final Destination, that would be lovely.
Vaati's theme from The Legend of Zelda: The Minish Cap would be awesome, but I don't think it would stand on its own; Dark Hyrule Castle and Vaati's Wrath would need to be mixed in.
I would also love to have the music for Wario's Adventure, the final boss microgame from WarioWare: Mega Microgames.
Anybody who has played F-Zero GX should recognize this track from the Story Mode. Someone did a remix, and it would be cool if it was in Smash Ultimate. It sounds pretty good.

I like this idea. No reason not to include songs from them just because they don't have a fighter.
Personally, I'd love to get some of the remixes from Tecmo-Koei from the Warriors games, especially the theme for the Skyloft stage as it would fit Smash's take on that location very well.
Hmmmm... I would really love to have Crocodile Cacophony from Donkey Kong Country 2 in Smash Ultimate... but that probably won't happen, considering the emphasis on Gangplank Galleon. It's a shame — I consider Crocodile Cacophony to be superior to Gangplank Galleon in terms of what a final battle's theme should be like (though both songs are definitely better than K. Rool's DKC3 theme, which hardly even deserves to be called "music").
Another song that would be ridiculously unlikely to be included (but absolutely awesome if it was) is pretty much any song from Lost Magic's soundtrack — namely one of the level or boss themes. The stakeout songs to me are the standard boss battle theme (which really gets the blood pumping for a fight), the Twisted Wand Castle theme (it's the final level, and the mood is appropriately epic), and especially the final boss theme (I picked it as the theme of my legendary fakemon Mistikal for a reason — it sounds incredibly menacing and climactic).
Finally, I need to bring up Medeus's battle theme from Mystery of the Emblem (a.k.a. Fire Emblem 3/12) — both the original and remade versions of the song are fantastic battle material. The original NES version is slow and foreboding, giving the sense of being up against a dastardly, titanic, and overwhelming opponent who will crush you and everything you love, while the remade DS version is fast and energetic, giving a sense of being on the home stretch and having one final challenge to surmount before claiming victory. However, I would reckon that the original FE3 version is better-suited to an RPG, where the action proceeds as fast or as slow as you want it to and you have to feel the weight of every choice you make; Smash, being a fighting game, is inherently fast-paced and frantic, and the stakes aren't as high as in a canon Fire Emblem game, so the remastered FE12 version is the more likely of the two to get into Ultimate. Either way, if Medeus is a boss in this game (and I really hope that he is), some version of this track needs to be his battle theme — definitely not that bland-climax tripe from FE11.
I love music a lot, and there are a ton of tracks I love. You wouldn't believe until you see.
