A'ight here's the dizzle. If you short hop a uair the move animation will end before you hit the ground, thus allowing a double jump. Be aware, that I use the claw method, and in order for this to be possible you have to as well, or you have to be super quick.
This has led to a lot of interesting combo's on my part, the most noteworthy is ending uair combo's directly with a knee, lightning fast!
This technique is particularly easy to continue comboing with, or in many cases, ending combo's, since the height you can is larger than a normal short hop, but lesser than a full jump.
Be aware once again, that the uair must come out as early as possible, and the jump must occur when your character is almost on the ground.
I'm still experimenting with this technique, but so far it's a promising finisher to uair combo's.
