Can you change your character during a normal tourney? Or do you have to keep the same one all through?

Yes. Here's your normal set order:

1. Pick characters - usually double blind.
2. Strike neutral stages, play first match.
3. Winner of first match bans stage.
4. Loser picks next stage.
5. Winner picks character.
6. Loser picks character.
7. Second match played, repeat.
