I know this response may be a little late, but as long as you have tap jump on, it's pretty easy.

Thanks for the tips but I've more or less figured it out since my post. Now I just struggle about accounting shield stun when going for OoS options. I play with tap jump off so I had to find another way of performing options OoS. Since I L cancel and shield with L I set my R button to jump and do R+C-stick up for up smash OoS.

Seconded. That was my primary reason for setting R to jump and then I realized "well now I can just jump OoS with R." Speaking of custom controls, I also set y to grab so I can use r+y for easier jump cancelled grabs. I've thought about setting a button to foot stool but I don't really know how to use it. Has anyone had success with Zelda's foot stool?

My footstool is Dair. It works well.

On a srs note I think her footstool is situational and dangerous since more air time isn't always a good thing. Though it does have the element of surprise and confusion due to its rarity. Following up with an Lkick would be a possibility, but I go for Dairs for quick juggling unless they are at a high percent. Most people panic and shield after a footstool tho. Until they get used to it, anyway.
