those are pretty much my favourite stages.
basically
PS: your laser game ***** but there's a bigger space to chaingrab you in the middle of against relevant characters, and its relatively small so your awful recovery is somewhat compensated for
FD: lasers **** but you get combod so hard by most characters that I usually avoid it. I really dont like this stage for falco.
BF: I really like this stage with falco but a lot of other people dont. the platforms make a lot of combos easy, and you can laser camp under a side platform pretty effectively.
DL: if you are a very campy player this is a great stage. you can run away and laser with more freedom than the smaller stages. If you're an aggressive player it's not great.
YS: shine combos are great and finishing a mid% combo with fsmash or shine bair sometimes kills whereas on most stages you often need a second opening.
FoD: awful stage. your lasers get ****ed, your combos sometimes get tricky with the platforms, not enough space to camp on, etc
vs marth: DL and then either BF or PS. PS is probably better. ban YS or FD.
sheik: i really dont know. i dont have much experience. i'd go YS for easy kills and PS for lasers.
fox: YS probably. FD unless he has great grab combos, in which case your second pick is up to you. DL is probably good.
Jiggs: everyone says YS, but I gotta say my vote goes to PS. it makes it so easy to **** up her approach with lasers and dtilt/utilt/usmash/shine all kill at gross percents. second pick YS.
