You have to be moderately high in the air to make the fruit bounce twice. Z-dropping just above the ground will NOT make the fruit bounce. It would just set it down, and will disappear in like 3 seconds.

The lowest height would be about at the height of Pac-Man. Anything above that will definitely work.
