Why do you assume Toph would need to fight both at the same time? This is why you should see 1v1 rather than FFAs.
Also, you guys really underestimate Toph. She was able to hold down an entire library from sinking, granted, with a lot of effort so she's not as strong as Gaara but that wasn't even her prime(and she could just earthbend the meteor itself if she wanted to).
Then you have her speed on the ground which is faster than any of the sandbenders because her wavedashing lenght is ridiculous

She can also do this effortlessly

But regardless, a lot of this fight comes down to terrain. Sand isn't Toph's strongest bending, she does better with solid earth and metal. Anything that's not a full on desert ends with a Toph victory simply because she can bend more than anyone else.
Crocodile can't harm her in the desert.
Gaara could probably overpower Toph in the bending department but he has a sand shield so that's an issue for him.
But Iggy is the true winner because only Stands can harm other Stands. The Fool becomes an impenetrable shield against everyone else. He pisses on their sand and ****s on their graves.
"Sand isn't Toph's strongest bending."
"Crocodile can't harm her in the desert."
These.... these don't go together.
Keep in mind that while Crocodile
might not be able to harm Toph (his own body control might, and probably would, supercede her bending power), Toph
can literally do nothing fatal to Crocodile, it doesn't matter how hard or fast she can attack Crocodile if he just reforms unharmed from her attacks the moment she lets up (or, worse for her, turns the rocks she's flinging at him into sand). Crocodile was defeated by Luffy by being punched through
several feet of bedrock and was only knocked unconscious by the punching (and that was Round 3). He states himself, while he and Luffy are in a crumbling underground temple, that even if the temple buries him, he'll just turn it all into sand and leave unharmed.
She'd fair much better against Gaara, but Gaara would be up in the air, keeping his distance (his go-to battle strategy); and Toph can't see him at that point, if she can't see him, she can't throw rocks at him.
Toph becomes the weak link in the three way battle between them, and Gaara and Crocodile would dispatch her fairly quickly.
Regarding Iggy, if he tries
this on Crocodile, he's dead, pretty much instantly; all the man needs to do is grab him with his hand. Iggy's a smart dog, but he's also arrogant; if he believes for a moment that he's got the drop on them because he's a stand user and they aren't, that ends with his loss.
