I only watched the first video.
You're...okay. Your problem is, you need to take advantage of the enemy. Marth has horrendous recovery, and when he's hanging off the ledge around 1:45, you're waiting for him to come back instead of seizing a valuable opportunity to give him a good whack. You also can't rely on Snake's arials-you're trying to hit Marth with them from far away. If you miss, you're left kicking at thin air and your opponent has a great chance to slap you silly with an up-smash.
The most important thing to remember is that you seem to be playing Snake like you would Falco or any normal character. Snake is out of the ordinary-slow and tactical. You can't rely on grabs, shields, and arials-edgeguard him with the Nikita. You also have to use the landmines and C4 strategically- don't just stick them anywhere and hope you don't accidentally step on them. Plant them, wait a little bit until your opponent's forgotten about them, than lure them right onto it.
Just my 2 cents...more like a whole dollar, come to think of it. ;)
P.S. I really like your use of the mortar slide, though. Way to edgeguard with it-I've seen it KO at as low as 50% damage with direct contact.

Play as Snake more.

Lambchops has a very solid Snake (heh). His use of grenades and mines is impeccable, but the Nikita missile could have been better used. Snake's aerials are very good and don't leave him open very often unless you're spamming them randomly, the range and knockback are fantastic. The same goes for his grabs.

From what I saw Lambchops almost never planted a mine/C4 in a random place, and they were very effective in discouraging Linguini from attacking him from below as he fell. Relying on your opponent's forgetfulness is never a good tactic. Planting and forcing your opponent to move where you want them to is much more effective.

Finally, I've almost never seen the mortar KO under 100% if the person getting hit knew how to DI correctly. Good matches Lambchop, the only thing I'd suggest is more jab/ftilt combos.
