All I know is that the most guaranteed way to DI out of Falcon's combos is with a fairly comprehensive grouping of simultaneous inputs, but it's second nature to me:

L + R + A + Start.

Another thing, I recall that consecutive jabs where punishable in some way, how is this done? (any char+ punishe helps)

You can always crouch cancel his first 2 jabs. At any spacing marth and CC and DI down and away to CC grab him before the gentlemen hit comes out. When really close anyone can do this. If you have a shine obviously CC shine will work.
