1. Your general movement is sluggish. This sucks because it's way easier for Peach to ruin your spacing. It's also bad because it forces you into shield a lot, and Peach is good vs shields. Work on your speed with foxtrots, varying wavedash length, wavelands, full wavelands etc. This is something you can practice quite easily on your own, and it's very important.

2. Full hop less. Sheik sucks when someone is below her. You full hop bair a lot, Peach can just beat this with dash attack or turnip>aerial.

3. Know your out of shield options. Peach Dsmash=free wd oos grab/dsmash. wd oos is a useful tool in general to reset bad situations, retreat nair oos can be useful as well.

4. Sometimes the safest thing to do is nothing. Throwing out unsafe moves is a good way to get punished, focus on regaining stage control and resetting bad situations. Pressuring them by waiting is also highly effective, forcing them to shield and then waiting outside of shieldgrab range is scary.

5. If Peach is doing dsmash edgeguard DI down for the first hit (then let go afterward), this way you get knocked onto the stage rather than back off stage.

6. Know your opponent's ranges/options when pressuring them, especially near the edge or when edgeguarding. Peach actually doesn't have many options to get out of pressure (her best options are nair, float/jump away or air dodge), e.g. if you're spaced and their only option left is to air dodge then just wait before hitting them.

7. Use needles smartly. You do full hop needles when it's really unsafe, it sucks because it just gets you hit and puts you in the air. You can use them on the ground to force them to do something, or you can charge them to see how your opponents react, or you can use it in combos.

Jolteon pretty much covered what I wanted to say.
But in addition,

Space your aerials properly so you get punished.
Do short hop aerial pressure instead of full jump.
When you do full jump be aware of the fact that you can DI during the jump and while falling.
Also the needle edgeguard might work if they are low and far but if they are high you can just go for a slap or some type of hit.
Don't be afraid to grab the edge.
Grab more.
Counter turnips with nair through them.

You should learn how to short hop. It's kind of essential to modern Sheik style (and every other character).

Grab more. You should be punishing these missed down smashes with grab. Learn how to do it, and you'll find Peach really easy. You can also do air needles > grab, but you need to be able to SH for that to be effective (FJ is too slow). SH fair and bair are great too.

Hit your l-cancels.

You need way more comfortability with movement. You're slow and not fluid. Especially out of shield and near the edge. You can WD oos grab on a lot of these d-smashes. WD back oos is very good. Dash forward > WD back is a pretty good sequence to fake an approach.

Don't dair coming down all the time. Air-dodge, double jump > waveland, bair, etc. are all good options too. Dairing crouched characters is horrible.

When Peach does the down smash edgeguard, hold down on the 1st hit of the d-smash, then quickly move the stick up before the 2nd hit connects so you go across the whole stage. Improves your rate of survival against that edgeguard immensely.

CC grab is really good against weak moves like jab and weak aerials. To perform, hold L or R and mash A while holding down. You can also CC d-smash, which is easier, and sometimes better because of its speed and hitting everywhere.
