Couldn't you just out camp Pokemon Trainer?

Depends on the layout of the stage. On Temple, this should be easy, but on Final Destination...

On most stages it's viable. It's very very easy if Sonic gets to counterpick.
What stages might those be? I honestly can't think of a single stage where Sonic could camp that effectively unless it was a level like Temple or the Squirtle was just plain dumb.

Well being Sonic he could use the freakin Roll dash jump combo over and over to jump over Squirtle on any decent size stage. Only short stages would stop this, it think. (Which luckily seems to be a lot of the stages)

If one does better against sonic, stalling for fatigue would be viable, but if you are good with all three, you should be able to fight back.

^I think you may be idealizing it a little bit. Each PT is obviously going to be better, or feel more comfortable with a certain Pokemon, and each Pokemon will probably do better or worse against a certain other character. If the difference is noticeable enough, a good Sonic certainly could maybe play more defensively against his worst matchup and force a switch.

That being said, of course being good with all three helps tremendously with this situation. I guess some could call this a weakness in PT, but if you ask me, that's easily balanced out by the fact that he's 3 in 1.

Also, as others have said before, very few tournament legal stages, if any, are large enough for this to happen, and if your opponent does try this, he's going on the defensive while you attack - not a terrible situation if you play carefully.

Camping for an entire 2 minutes is not going to be easy because of the stages that are made available for counterpicking. And even if you do happen to stall for 2 minutes, the PT does not have to change pokemon, it just makes damage and knockback go down. So the PT could still fight with a messed up Squirtle, and then just wait till he can get you off the screen far enough to change. And, when he changes to Ivysaur, there is no way you can outcamp him :)
