Use olimar, Pikmin block the bananas when thrown.

Otherwise the key is to learn how to pick up bananas. Even stuff as simple as shielding and then grabbing the naner from the air as it bounces off.

Diddy is a pressure character, but he's reliant on the bananas. You have to out pressure him, camping will almost never work.
