Agreed. While I'm not a huge fan of Hyrule Castle (but I am a fan of it), it is hard to hate. Everything about that stage screams epic. The broken Roman Colosseum-esk side, the falling castle on the center left, the falling or single remains of walls, the pillars, everything. And while it is pretty freaking big, it doesn't feel overwhelmingly big, like New Pork City.Hyrule Temple, despite not being tournament friendly, is still one of my favorite stages in the series. It's a big stage, but not stupidly huge like New Pork City.
Really though, I think if we could play Smash WiiU and/or Smash 3DS with up to 6 players, Hyrule Castle would be all the more epic. While it wouldn't feel as ridiculously huge (it would actually feel just slightly huge, like Hyrule Castle in Smash 64). By the way, Hyrule Castle would probably feel "average size" with 6 players. That would be an interesting dynamic to test/feel out if 6 players Smash Bros. soon becomes a reality. I'd dare say it would be more interesting than Star Wars characters in Kingdom Hearts, unless of course said Star Wars characters kill the main (annoying) cast!
