Just how laggy is wifi over distances of say, NY to southern california? Are there any videos showing distance lag?

Well, the literal ping-time would probably be somewhere in the range of 125-175ms. How much that affects the game as far as the end user notices is a function of how good brawl's lag compensation mechanics/systems are. However, if someone throws a move(say an ftilt), the earliest you'll see it on your end or they'll see it(if you threw the move), will be the ping time+processing time.
