Why do competetive players grab the ledge when the opponent is trying to recover?

Yes this technique is called ledge hogging and stops their opponent from being able to take the ledge and recover. Players often roll onto the stage from off the ledge to gain invincibility if their opponent is trying to attack them when recovering.

To expand on that a little:
- In melee only one character can grab the ledge at a given moment. While doing a neutral getup / rolling onto the stage / ledge attacking your character is still considered to be occupying the ledge until the animation is finished. You also get about half a second of invincibility when grabbing the ledge. So if your opponents up-b hitboxes don't hit you, because your hurtbox is already busy rolling onto the stage or you just grabbed the ledge before they appear there, they can't grab it.
- Many recoveries in this game are very laggy when landing onto the stage (when you grab the ledge you basically get to skip the end lag). So making them recover onto the stage can lead to a big punish.

Yeah...this is edge-hogging and CPUs fall prey to this every time since they recover the same way every time. You'll have to learn to do this often to make it in competitive play. But in Brawl, y'all need better timing since unlike here in Melee, the ledge instantly becomes available for others to grab as y'all get off it. And obviously in Smash 4, edge-hogging is no longer, instead being replaced by ledge-trumping, which can work just as well as edge-hogging, so...:)
