What stages are best to counterpick against some of the harder matchups?(Sheik, Marth, Peach..)
I know FD is good.. but are there any others?

What stages to pick?

Yeah, you can ask anyone and the first or second thing they say is "Final Destination".
But it you're not going for a flat surface, I say that the standard stages with the one big platform and three smaller ones is a strong place for Mario. Any stage with that structure works for me, like Fountain of Dreams, Yoshi'd Story, Dream Land, and my favorite, Battlefield. Pretty much all those tourney-legal stages are in his favor. Pokemon Stadium is also good for pretty much anyone. Though there aren't many places that will give you a stage advantage and your opponent a disadvantage at the same time with those opponents.
