Smash Wii U's single player is fine. People just whine too much around here to be perfectly honest.
Smash 64 and Melee's classic modes tried to incorporate matches related to each of the major fighters, i.e., fighting a Kirby team, or a giant DK, or against the Mario Bros in a 2 v 1, things like that. It was a great setup, but it doesn't work as well with this roster. The mode would have to be much longer to stay true to the earlier versions, and it would have been horrible to have to play through a long Classic mode 50+ times. Same thing goes for Melee's adventure mode. The shortened 7 round version in Smash Wii U works just fine, and it's not that bad on 9.0. I've beaten Classic on 9.0 with about 20 different characters.
The All-Star mode is fine. It's going to be kinda long and drawn out no matter how it's set up, due to the roster size, and randomizing the fights wouldn't have helped that much. Trying something different this time was fine. Besides, who plays All-Star mode after completing all of the associated challenges? It's probably the least enjoyable mode.
Trophy Rush is by far the best trophy-centric mini-game they have included in the series. By FAR. Brawl's version was completely arbitrary and unrelated to anything else and Melee's was just a gumball machine. Trophy Rush actually uses the Smash engine and lets you apply the same skills that you use in all of the normal modes.
Event Mode is the best incarnation so far.
Master/Crazy Orders is a fun unique mode which adds some real variety to the matches, similar to what you can do in Special Smash, which (for me anyway) is a horribly underused mode. I like that they made some of those elements available in other modes.
Smash Tour is not perfect, but it's entertaining enough. It's not my favorite thing ever, but I don't understand all the hatred about it. With 4 human players nobody has to deal with the cheating AI.
Target Blast is ok, not as good as having unique Break The Target stages for each character, but again, that's a consequence of the enormous roster. I don't fault them for designing 3 stages instead of 50. That wasn't a mode I ever really played more than a few times anyway.
