Would the rest series switch to 3D like Mortal Kombat or would they just stay in 2D?

As this game is well beyond new, I'd say these forums are less a "General 64" forum and more a tactical/competitive one. If you're going to bring up a topic of discussion, it would be best that you ensured you have a very solid notion in mind and you express yourself with comprehensible English. People around here are likely going to be more receptive to you, even if it is a "odd topic" if you have something actually solid to contribute to it in the first place.

While the responses have been a bit iffie, their excuse (I'm sure) will be that your question is quite confusing/conflicting with the facts.
Do you mean 3D/2D in terms of graphics or game play?
Graphics wise, there wasn't much point to a completely 2D game in the N64 era. It shared a lot of resources with many other N64 games which were already using super fat 3D models.
Gameplay wise, it is all but 2D in technicality. While hitboxes are cubes (and so are hurtboxes on characters), the most protruding measures of these moves are their horizontal and vertical reach, and as hurtboxes were also cubes (in comparison to later game's hit "bubbles" (varied sized spheres) there wouldn't have really been any situations which these cubes wouldn't overlap each other vertically/horizontally after they do in the Z-axis.

While melee moved up to spheres, for the most part it seems the horizontal/vertical notions were still dominant, with maybe some twinges of spot dodges, rolls and air dodges having some sort of Z-axis displacement in models which could result in 3D-ish interaction. Definitely noticeable in Brawl where a character like Dedede has the slowest spot dodge in the game, but his entire front third to half of his body stays firmly tilted 'backwards' throughout the animation and is able to avoid standard horizontal/vertical hitboxes even when he isn't invincible.

Beyond that though, the game still has no distinctive Z-axis mobility tools and is still played with a 2D mindset.

and competitively minded people don't care about graphics, are you trying to ask whether or not it would've been cool/better if Smash 64 used well drawn sprites for models? Then say it.
