What do stat icons mean for amiibos?

The gray icon, red sword and blue shield

I thought they indicate if an amiibo was fed spirits or not but many amiibos I’ve seen online including my friend’s Kirby have a gray icon like my amiibos but they seem to do more damage than mine.

Does gray mean the amiibo’s attack and defence are equal, not necessarily that it wasn’t fed spirits?

The color of the icon indicates the spirit Type the amiibo has.

Red is attack type

Blue is defense type

Green is grab type

Gray is neutral (Amiibo's that have not been fed spirits also have this icon)

The Type of you amiibo does not depend on stats (you can have an attack type amiibo with 5000def and -800 attack, and vice versa), nor does it empower any specific moves (ex. Grab types do not have more powerful grabs).

What they do do is confer advantage or disadvantage, depending on the type your opponent has.

Red beats Green

Blue beats Red

Green beats Blue

If you have type advantage, you deal 1.2x damage to them and receive 1.2 times less damage from them, and vice versa if you have disadvantage.

I want to make an arena where everyone uses a not fed with spirits amiibo, but everyone who joins the arena always brings one that they fed with spirits even though I named the arena “no spirits allowed”. What’s the best way on the player confirmation screen to tell if a gray icon amiibo has been fed spirits?

Ask the player? There's no other way to tell AFAIK

Oh, so you want just Vanilla amiibo.

"Vanilla" is what the amiibo competitive community describes as amiibo that were trained, but not fed Spirits to augment their stats.

Unfortunately, the only way to tell if someone has brought in a Vanilla amiibo VS a Spirits amiibo is if you establish that with the people you're using the arena with and hope that they're not using Spirits as well.

Sad though, is most people who would know that are usually just a part of Exion Vault, the premier amiibo trainers - and they don't have the clout to showcase that side of amiibo fights as say, Smashtubers like Alpharad, Choctopus, quak, etc.
