Most of the people that spam grabs generally do it when they are in the air being juggled or right beside/above you. Delay your attacks.
If you think they are either going to attack OR counter, shield grabbing probably isn't that bad of an option either.

after you figure out someone's habits it becomes really easy to punish. chase them into the air and don't attack to bait it out. on the ground dash at them to draw it out

Don't attack early just because you can, instead attack later, so you can bait his counter and still get an attack in.

For example if he's above you, you can jump up and wait for counter, then hit him, and if he doesn't counter you can hit him anyways before he reaches ground if you followed his DI well.

And overall just improve your reading. If he's in a situation where he's cornered such as trying to get back on stage and you're there ready to attack, they'll likely counter, so do some mixups where you just go back and forth to see if he counters and then attack or grab after it.
