At low percents you can attempt to chain throw her with down throws. I'm not 100% sure if SHFFL nair is safe at low percents against her crouch cancel. But I would focus on grab set ups at low percents and SHFFL dairs at low percents to rack up damage and set up for the knee.
At higher percents, the nair and uair work beautifully on Peach. Both are perfect lead ins to the knee. But for the nair, make sure both kicks hit her before you fast fall it.
