Transition from Project M to Melee

The games feel different because they are different. Project M has improved over time and shall continue to do so. Melee is static and technically more demanding.

Wavedashing/wavelanding feels slightly different, recoveries aren't quite as good in Melee, stages are different sizes in proportion to the characters, changing movesets, changing character speeds, and many other aspects make them feel different. The amount of difference you will feel will most likely depend a lot upon how much your main has changed between games, although you can definitely still feel the change even if you don't play the same character in both games.

They definitely feel different. There's a reason why Melee players often describe PM as clunky. The tech skill entry barrier is also a lot bigger in Melee.
