So, the current way stage striking is generally done in PM tournaments is... weird. Usually, stage striking has benefits for going first and second, so either way you're getting something out of it. In PM, however, there is no benefit to striking first and instead you'll benefit if you strike second. Here's why:
Going first, you have to take off a stage with no knowledge of what the opponent will be striking. You don't know if they like or dislike platforms, large stages, small stages, etc. You are playing against a character, and certain characters you know are better on certain stages. However, you don't really get anything from them and have to make the first move.
On top of that, you don't get the final say. You have to choose when there are four stages left what the last two possibilities will be. While it's not terrible, again you're at the disadvantage.
Going second, you not only get to see what the first strike is (so if you wanted to use a strike on the same stage, you no longer have to), but you also get to choose at the end between two different stages.
In every other smash game, the person who goes first also goes last. It gives minor benefits to each, and becomes a bit more of a personal preference for what each player wants.
I would suggest tournaments in the future to at least try out a 2-3-1 striking rule. Going first you'll have to strike more before getting knowledge about your opponents strikes, but you also get to choose between the last two stages.
