Was getting bored of it myself as well. Not that we have an actual procedure for name changes.

Also, is it only Latias that changes into human? Why doesn't Latios?

Mostly following Movie 5 logic I think and that Latias is more happy-go-lucky. Latios hasn't gotten as much attention until recently in the ORAS chapter where he teams up with Ruby to go after Zinnia.

BTW Zinnia's also pretty awesome in the manga. She looks so smug.

According to the pokédex, Latias's feathers are more built for making light tricks, usually to turn herself invisible. Latios is built more for aerodynamics.
