There are two reasons why they would step in. One, confirming Rayman. Whether the leak itself is real or not might actually be irrelevant. Secondly, they're debunking it, but once again, why would they do that? It's not their business, and they wouldn't waste their time.

Tuesday still has some hope. I'm not letting this go until the statement is made. Until then, I'm not dwelling on this any further.

See, here's how I think it went down.
Leak was made and then caught fire. After adding enough fuel to the fire, Ubisoft was going to step in. Presumably to say that the leak was indeed fake. (Remember, the statement was made before this video, so it's not too out of the ballpark.) Then, either at the request of Ubisoft, Nintendo, or his own admission, he made the video showing how he did it.

Your second theory might actually be true. Why would they say something ? To debunk it. But they wanted to still give some hope to people like you. Unfortunaly, the creator saw how big the leak was going, and so directly said how he made it, and so debunking it. They could still say something about it, but they would only say this :

"We are honored to see how willing the fans of Rayman are, but unfortunaly, Rayman won't be a playable in Super Smash Bros for Wii U & 3DS."
In other word...

In this case, even showing video footage of Rayman on the roster list isn't enough to make a leak CONFIRMED!! Hype makes you gullible. Don't be gullible.

I fully believe the Gematsu leak got some stuff right.

The "true, but outdated" claim is the one that best describes the situation regarding that leak. Considering that changes happen to projects from their inception to their finalization, the discrepancies are easily explained by this.

Data dumps revealed that there's an unused file for a series icon of the Rhythm Heaven franchise, implying major content like a stage and/or character was considered at one point in development.

Though we will never know the veracity of the leak with 100% assurance, it's not at all outside of the realm of possibility that whoever leaked that had some legit information about the game.

The Wii Fit Trainer was a nearly impossible character to predict, but the leak predicted way beyond that, confirming a good chunk of the newcomer roster. Sorry, I can't just take it as a mere coincidence.

Indeed. But notice how some still found some errors. They were minor, but they were there.
Remember the "R" that wasn't like the one of R.O.B ? Yeah, the smallest contradiction might be the biggest evidence against this leak.
